Winemaker notes

This wine falls into the "tuilé" category within the Banyuls appellation. This term refers to the oxidative style of aging for red banyuls. At Les Clos de Paulilles, traditional glass demi-johns are used for this aging process rather than oak barrels. These unique vessels are stored in the sunshine and the wine is allowed to go through a natural oxidation and maderization process. The flavours that develop are tertiary aromas like cocao, tobacco, toffee and toasted nuts. The estate produces their own estate-grown and distilled grape spirit for their Banyuls. The final wine exhibits very pure berry and dark chocolate notes with balancing acidity. The residual sugar is 105g/L.

Viticultural Notes

The goblet-pruned vines are planted on terraced slopes of schist that face the Bay of Paulilles in the Mediterranean. Grapes are hand-harvested. The yield is approximately 15-18hl/ha.

Fermentation

Bunches are 100% destemmed. Fermentation begins in stainless steel and is haulted halfway through by the addition of neutral grape spirit. Maceration takes place over 5 weeks with daily pumpovers.

Aging

Aged in glass demi-johns outside, facing the Mediterranean Sea, for 30 months. Climatic variations (sun & heat during the summer, cold & wind during the 2 winters) lead to oxidation and concentration of the wine.
